One of the high quality pasta choices offered by Antico Pastificio Morelli is flavoured pasta. This type of product is available in different sizes and tastes to satisfy everyone's palates.
The flavoured pasta is the result of a meticulous and professional work of bronze drawing, rolling and, finally, drying at low temperature. Antico Pastificio Morelli uses a durum wheat semolina dough for which only Tuscan semolina and water are used. There is no trace, therefore, of preservatives or other artificial substances.
Flavoured pasta is therefore an excellent solution for anyone who wants to savour tasty variants of the typical Italian pasta.
You can choose between different pasta formats characterised by a variety of flavourings. Below we will look at all the available varieties.
LINGUINE WITH RED CHILLI
The linguine with red chilli is made with Tuscan semolina and Italian chilli and as a result it has a slightly spicy chilli after-taste. It adapts especially to very simple condiments such as garlic and oil. Cooking is very fast and can be used together with traditional linguine.
LINGUINE, FUSILLI AND SPAGHETTI WITH CUTTLEFISH INK
The intense black colour of these formats of Tuscan semolina pasta is given by the cuttlefish ink, which remains an intense black even after cooking. This feature makes it ideal for fish-based condiments, such as a shellfish pasta dish.
TAGLIATELLE AND STRACCETTI WITH PORCINE MUSHROOM
This flavoured pasta variant is flavoured with porcini mushrooms and wheat germ. Made with the best Tuscan wheat. The porcini mushroom straccetti can be mixed with the egg pasta of Antico Pastificio Morelli that has the same cooking time (5/6 minutes of cooking).
TAGLIOLINI WITH SALMON
One characteristic of this tagliolini is the incredible taste and fragrance of salmon that goes perfectly with wheat germ and simple fish dressings.
GARLIC AND BASIL LINGUINE
With this format it is possible to obtain an incredible flavour of garlic and basil that combines perfectly with condiments typical of the Italian tradition, namely garlic, oil and chilli pepper. Again, the garlic and basil linguine can be combined with the traditional format.
SAFFRON LINGUINE
The flavour of this pasta variant, given by saffron, is perfect for condiments based on fish, meat and vegetables.
BLACK TRUFFLE PICI DRITTI
The black truffle pici dritti is distinguished by its micro-hole in the centre that closes during cooking. In this case the cooking time is around 11 minutes and it releases a wonderful truffle fragrance that pairs perfectly with mushroom sauces or truffle flavoured products.
The same aromatisation characterises other pasta formats of Antico Pastificio Morelli, truffle pappardelline, truffle tagliolini and truffle linguine , characterised by an after-taste of truffle and wheat germ, which is released during cooking.
GREEN OLIVE FETTUCCINE
Taggiasca olives are the main ingredient that flavours this pasta format. The olive fettuccine can be combined with simple vegetable sauces or, alternatively, with tomato or tuna.
LEMON AND PEPPER PAPPARDELLINE AND LINGUINE
Sicily and its fragrant and tasty lemons, together with wheat germ, give the aroma to these pappardelline and linguine whose flavour is enhanced by black pepper. The ideal combination is with condiments of fish, white meat, molluscs or crustaceans.
TOMATO TAGLIOLINI
The Tuscan tomato is one of the tastiest products of our country that give flavour and colour to the tagliolini of Antico Pastificio Morelli. The tomato tagliolini is perfect with vegetable condiments, its cooking is very fast and it can be combined with egg tagliolini, as well as with those with a salmon taste.
NETTLE TAGLIOLINI
This variant of pasta has a very particular taste with its flavour of nettle, perfect with delicate condiments, for example vegetables, sage, butter or with sauces such as pesto and fresh tomatoes. In addition to being able to be mixed with the classic egg tagliolini, the nettle tagliolini goes perfectly with the pasta flavoured with salmon and tomato, thereby forming a dish with a rich and colourful flavour.
SPINACH FOGLIE D'ULIVO
This pasta format is distinguished by its unique shape and the special flavour of spinach. Perfect together with vegetable condiments.
FENNEL LINGUINE
The delicate flavour of fennel characterises this type of linguine that finds a perfect match with strong flavours such as sausage or with simple and delicate condiments such as butter and parmesan.
HEMP LINGUINE
The intense flavour of this variant is given by hemp and wheat germ that goes perfectly with refined condiments or with a meat or vegetable sauce.
